The online backup already skips the <project>/log folder.
is there a way to add the <project>/cache folder to that list of folders to skip?
No real reason to backup the cache folder as it will be recreated as the server provides files for the clients. If your system has such a crash that you have to restore a version, you probably should refresh any remote cache files too.

The online backup of the configuration excludes the log and the db directory. All other directories will be copied as the backup functionality cannot not know which directories are needed and which not.
For the backup of the database an own backup is available.
When you do not need data in the backup directory you can simply delete by an own post process after the backup is done.

The online backup functionality should know that the cache directory is not needed, just as it knows to exclude the db and log directories.
Apparently it has been overlooked to exclude this cache directory, when the file compression and/or encryption feature for DesktopUI/MobileUI has been implemented.
You must be kidding to suggest as a solution, that every customer with DesktopUI, MobileUI and/or ULC UX must implement their own post process for this. This is very inefficient.

The backup of the project files is only executed manually on demand by the customer.
There is no process of making a backup of project files in a cyclic manner. Therefore, it is not that important that the backup excludes folders.
